The Hollow part of his name will have come from his grandmother, Wilmot Hollow who married first William Thomas in 1827 and then as a widow Thomas Eddy in 1831. Their son John Eddy was baptised 4 Mar 1847 of Bosigran

I agree with Londoner that Thomas was almost certainly the son of John Eddy and Elizabeth Berryman however it appears to have been only when he died that he was recorded as Thomas Hollow Eddy.
Thomas son of John and Elizabeth Eddy of Bossigran was born at Zennor 20th April 1880 and baptized 3rd October 1880
The information you supplied from the death certificates has helped me identify his wife, Annie. William A Tilly married Doris Eddy in 1948 and a further search of FreeBMD provided a birth for Doris in 1926 with her mother's maiden name recorded as EDDY.
Thomas Eddy married Annie Eddy in 1915 but as the marriage does not appear in the Zennor register I must assume they married either in the Registry Office or in one of the Non-conformist chapels. It also appears that any children were probably baptized Non-conformist so although there are several possibilities in FreeBMD it is difficult to know just how many children there were or what their names were. We know of Doris of course but unfortunately there were other marriages where both Bride and Groom were named Eddy.
From the death and burial information I believe I have also identified Annie:-
Annie daughter of Matthew and Charity Eddy was born at Zennor 12th January 1891 and baptized 5th April 1891. Her parents were Matthew Eddy and Charity Thomas Bone who married at Zennor 2nd January 1886.
