Given the difficulties we've had with this I went back to look at Joseph Tonkin. I have obtained his marriage certificate. This shows his marriage date of 19 July 1855 in Salford, and the certificate shows his age as 26 on this date, and lists his father as JOHN Tonkin, a farmer. This puts Joseph's birth date at around 1828-29.
This is therefore at odds with James Tonkin as his father - unless these names are sometimes interchangeable?
Can anyone help?

Welcome to the site 'laurencetonkin'. I don't quite know what happened with this or why we focused so much on James but based on this latest information I checked the St Buryan register again and I think the recorded we need is:- Joseph son of John (shoe maker) and Grace Tonkin of Church Town baptised 14th December 1828 at St Buryan John was recorded as a shoe maker here but that does not mean he was not also a farmer. Thanks CT- the 1851 census shows John and Grace with John's occupation having changed from shoemaker to farmer - this supports the marriage certificate I have.
