Well Folks .................. I do believe I have solved the problem of Wilmot Quick!
Given it appears that Wilmot was living three doors from her father in 1861 I took a look at FreeBMD to see what potential Death or Marriage entries there might be.
No Death record appeared that would be a match but there were three Marriage records between 1861 and 1871 for Wilmot Quick.
Two of those I was able to eliminate easily but the third produced a small problem.

Notice that the transcriber was unable to determine what the Page number was and hence this entry appears on its own with no possible spouse.
The Scan was available so I had a bit of a peek (as you do!) and I reckoned it looked like 548.
A search of marriages for June Qtr 1862 Vol 5c Page 548 produeced:-

This made things much easier given that I had previously identified the wife of John Jenkin Eddy as being Mary Harvey!
So I turned myself to the 1871 Census to see what might be found there.
Searching for Wilmot born Cornwall 1821 produced this 'rather close' match:-

John do., son, unm, 17, farm labourer, St Ives

Just to be sure I then looked at the 1861 Census to see what I could find for John Bennetts.

AYR, St Ives
John BENNETTS, head, mar, 35, farmer, St Ives
MARY M do., wife, mar, 34, St Ives
John do., son, 7, St Ives
William H do., son, 5, St Ives
Mary M do., daur, 3, St Ives
Quite conveniently John has three children here whose names and ages (apart from middle initials) seem to match very nicely with the 1871 record.
John BENNETT age 29, farmer of Ayr, St Ives married Mary Major HARRIS age 27 of Stennack, St Ives 20th July 1852

So Wilmot daughter of Israel and Jane Quick became the second wife of John Bennetts in 1862! ;D
