It will be extremely difficult to accurately piece together any family at St Just for this period I think although it may be possible to arrive at some reasonable conclusions.
I notice you have quoted some births here so I would like to know a little more.
You say you have found a birth in 1604 for Mary d/o Thomas and Margaret Cock?
Do you have a source for this information?
From what I understand the earliest surviving baptisms for St Just are 1612.
Of the three Cock children you have mentioned I would expect to possibly find John but there is no sign of a baptism for him at St Just.
Moving forward to Pasches Oates for a moment and I notice you have her born around 1635 which is basically what IGI shows and is based on her marrige in 1656.
The standard thing in IGI with member submitted entries seems to be that females married at about 21 and males at about 25 and hence the reference in this case to a birth around 1635.
So you do need to be wary of that.
I found an example some time back of a similar entry where the groom's age in IGI was portrayed as a date some 25 years prior to the marriage.
I subsequently discovered that this man was a widower aged in his 60s or early 70s at the time of that marriage!
Likewise either party may be only about 17 when married.
So if you take that into account in this case you may be able to form a better and more flexible picture.
So - let's stick with the Cock family for a moment.
We need to rely on the early surviving St Just baptism register to have been in good enough condition for all entries to have been readable.
That being the case then there appears to have been only one baptism for a Cock child between 1612 and 1619.

I would expect Thomas is the one who married Margaret Williams in 1599 and therefore that there were more children prior to 1612.
There is one further consideration to take into account at this point - Was Thomas Cock the only member of that family at St Just and baptising children there during this period?
For now we can work on the assumption that he was.
The next thing I have looked at is Cock marriages at St Just (remember that some 'of St Just' may have married in another Parish).
There does not appear to be another Cock marriage at St Just until 1628 which suggests also that Thomas and Margaret may have been the only couple involved.

That list takes us through to 1655 so I think for the moment we can say that the first four were very likely siblings and, therefore, children of Thomas and Margaret.
Gone is probably Joan bp. 1612 and therefore married at 18.
You can probably also add John as another child given the following baptism:-
Thomas son of John Cock bp. 20th February 1632 St Just
I am not sure how much this helps you but it is something to work on based on the limited information available.
You can apply the same thinking to the Oates family although there were at least two (James and Hercules) baptising children at St Just in the early 1600s.
I will have more of a look at this and add any further information as I find it.
