FreeBMD - the only Ambrose recorded being born from 1855-1858 in the Penzance R.D. is Ambrose BONEY in 1858.
And nothing remotely similar to 'Ambrose' in the Quick Births.
But there he is as plain as day in 1871 age 14.
However I am not certain that he is the grandson of James Polgrean.
The entry is another of those confusing ones but there are a couple of possibilities.
He could be a Pascoe grandson I suppose but that seems a little 'left field'.
It is certainly interesting and intriguing - a real 'teaser' you might say.
There seems to be nothing similar in any records I have looked at and no doubt you have done the same - OR HAVE YOU?
I decided to do a search for ALL baptisms at Ludgvan from 1855 through 1859 - just to see what was there with any degree of similarity.
And I think I may just have found the answer for you!
With this one I even went back to FreeBMD and tried another search - a search I have tried before with no result.
This time I even shortened the Christian name to the first two characters with the same result as every other time I have tried to find more information about this particular person.
The result is that there is a Birth Record and absolutely nothing else!
For that reason I believe that this entry from IGI is your mysterious Ambrose Quick/Polgrean:-

The name YMAREST, when spoken, may well 'sound like' AMBROSE and, as I just mentioned, there is one record and one record only in FreeBMD for this person.
Also note that this baptism is for a MALE child!
I do not know, at the moment, just who this particular Catharine QUICK was and have not yet seen a baptism record for the child which makes life a little difficult.
However there is a possible explanation for the use of two different names in the Census.
It may be that the 'reputed father' was a POLGREAN.
The relationship (other than lodger) to Jane JAMES in 1861 escapes me as does the relationship to the household of William PASCOE in 1871.
BTW - the name Ambrose POLGREAN does not appear at all in FreeBMD.
