Hi Amy
Firstly, having no luck with the marriage of William Quick to Emma J. That said, there is a possible marriage in the 3rd quarter of 1855, Penzance District. I have had a look for possible baptisms of Emma J's in St Ives, and the most llikely seems to be Emma Jane James Shugg, daughter of Samuel and Sarah, bapt. 28 August 1831. The date would fit, and the name Sarah is carried on in one of William and Emma's children. This is only a possibility at the moment though, and I will have to check the name and reference in St Catherines Index to see if she was married to William Quick. This may have to wait until next week, unless anyone else has access in the meantime.
I can't find a reference in the 1861 census to say that William and Emma were living in Penzance? I have them as living in Back Street, St Ives, with place of birth as St Ives. Also, you say that Emma died after the 1881 census? In 1891 she is living at Tregenna Place:
Emma Quick, Head, Widow, 59, St Ives Cornwall
Edith Quick, Daughter, Single, 23, St Ives Cornwall
There seem to be two possible deaths for William, the first in the 3rd quarter of 1873, and the second in the first quarter of 1878, age 48. I will see if I can find more on this.
I have found the baptisms of Elizabeth Ann, Paul, William and Edith (William and Emma's children) and these were at the St Ives Methodist New Connexion Chapel. If you haven't got these let me know and I'll list them for you.

Emma Shugg also married in 3rd quarter of 1855, Penzance District, with the same reference as William Quick, ie volume 5c, Page 466.
Still not set in stone that this is the right marriage, but I'd say it's a pretty sure bet

Emma Jane James Shugg's siblings, and their baptism dates, are as follows:
Mary Ann 21 January 1821
Samuel 10 January 1823
John 13 March 1825
Elizabeth James 4 May 1827
Emma 5 June 1829
Robert 25 July 1834
Robert 11 December 1835
A possible sibling is Sally, daughter of Samuel & Sally, bapt. 25 September 1818. I will have to check the census returns to check this, when I have a bit more time.
Samuel Shugg is listed as a "mason" for all of the above baptisms. This looks like his marriage:
St Ives Parish Samuel Shugg & Sarah James Nicholas, married 15 December 1817
If you want any more on the Shuggs let me know, otherwise will get back to the Quicks
NB: Have just googled on "Shugg" and there seems to be quite a bit of information online, including a one name study. It would be well worth contacting other Shugg researchers if you are interested in this side of the family.
NB2: Have just checked the 1851 census and Emma's mother is listed as "Sally" Shugg. So the Sally Shugg above would be a sibling of Emma.

Have just had a thought about the death of William Quick. If he died in St Ives then he was probably buried at Barnoon Cemetary. I will have a look at the burial register next week if I go to St Ives Archive Centre, and see if either death (1873 and 1878) is listed and whether there are any other clues noted in the register
Further note: I've found a burial of a William Quick at Perranuthnoe Parish on 07-Mar 1878, age 46, Residence: Henfor Goldsithney. This MAY be the 1878 death listed above, but as I say I will check the burial records before pursuing this.
