I must apologise for not being more organised, but I've only just managed to get over to the Records Office to get a copy of the William Hocking will amongst others.
I was disappointed to find most of the wills are images on microfiche, and not original documents. Some were very hard to decipher because of the poor images. Oh well, the William Hocking will wasn't too hard to read, but some words/names gave me trouble.
I shall transcribe the will as written then add any comments after.
Will of William Hocking, yeoman of St Hilary - Ref No. AP/H/4595/1
I William Hockings of the parish of St Hillary in the County of Cornwall yeoman being in perfect health of body do make this to be my last will and testament in manner and form following viz I bequeth my soul unto all mighty God and my body unto devout christian burial.
Item I give unto my son Will. Hockings one shilling to be paid at the end of one year after my death.
Item I give unto my son John Hockings one shilling at the end of one year after my death.
Item I give unto my son Samuel Hockings one shilling at the end of one year after my death.
Item I give unto my daughter Grace the wife of Richd Rodda one shilling at the end of one whole year after my death.
Item I give one shilling unto my daughter Marey the wife of John Russell at the end of one year after my death.
Item I give unto my daughter Ann the wife of Will. Semmens one shilling at the end of one year after my death.
Item I give unto my daughter Honnour the wife of Francies Dearie one shilling at the end of one year after my death.
Item I give unto my daughter Florence Hosking one shilling at the end of one year after my death.
Item I give unto my daughter Charity the wife of John Maddren one shilling to be paid at the end of one whole year after my death.
And all the rest of my goods & chattels meassuages lands moveable and unmoveable of wt nature or kind whatsoever in whose hands possitions or trustees or any part of them and all, I give unto Honour Hockings my wife home I do here by make my full and whole exector after my decease, and after her decease it shall devolve intirely unto my daughter Florence Hosking this being my last will and teastament joyintly evoking all other wills hertofore made by me.

I've kept the spelling as it was written, which is amusing in places, home for whom as an example.
Both witnesses were of the same unusual name.
The husband of daughter Honour, his name is annoyingly vague. His first name is definitely Francis although unusually spelled, and the start of the surname is definitely spelled with a D. The rest looks so like Dearie or is it Davie or Davis? No marriage found to help with this as yet.
The only marriage (apart from Charity to John Maddren) that I could find was between Mary Hocken and John Russell which took place in St Erth on 28 Apr 1707 (Cornwall OPC)
Much earlier than I would have expected, considering her sister Charity wasn't baptised until 1708!
Florence Hocking/Hocken was baptised in St Erth on the 25 Nov 1706 (Cornwall OPC)
