G'day Lindsay - I have not done any work on the Curnows of Gwennap in the past but can certainly do some investigating for you.
Cannot promise immediate action but will do my best.
However - looking at FreeBMD it looks possible she could be Mary OPPY.
I cannot find the marriage on the OPC site, the IGI or any PR transcripts I have and this is the only marriage for George Curnow prior to 1846 where a Mary appears.
March Qtr 1839 Redruth R.D. Vol 9 Page 276 George CURNOW
There are actually four marriages on this page but the only Mary is Mary OPPY.
Do you have any details at all for "Mary" that might help me identify her?

Still more checking to be done but George Curnow's wife 'may' be:-
Mary d/o John and Ann OPPY of Redruth bp. 13th October 1819 at Gwennap
In the 1851 Census Mary said she was age 29 but I think this, along with the ages of her children in that year, may have been incorrect.
Daughter Mary was age 10 and son George age 7 but a look at the 1841 Census gives a different picture.
In 1841 Mary was age 20 (possible rounded down) whilst daughter Mary was age 2 and son George 3 months.
It is possible that George died young and another son was given that name but that is inconclusive at the moment.
The age of daughter Mary is the stronger clue to the ages.
In 1851 Mary said she was born at Gwennap so the marriage from FreeBMD along with the baptism of Mary Oppy above is looking promising.
It may be worth your while to contact the OPC for Gwennap to see if they might do a lookup for the 1839 marriage for you.
