The Dorcas Wallis age 18 of 1861 census was the one from Trevorgans.
I can see no sign of a Dorcas Wallis age 7 in the 1861 census.

I have looked every which way and cannot find anyone that even remotely looks like it could be Dorcas Wallis, age 7, in the 1861 Census.
But we know she existed because she appears in the 1871 Census and also because her birth was registered in FreeBMD.
She may have simply been 'missed' at Census time or there is always the possibility she was in Wales or even outside of the UK at Census time.
It may pay to check if any older siblings are missing at the same time and see just where they were as she may have been with them.
She may also have been in another household such as grandparents, other relatives or friend and had her name recorded under that surname.
Although I tried searching just on the name Dorcas and found nothing.
You might try one of these avenues to see if anything might turn up.

I have checked the handwritten 1861 census St Buryan and Sennen area and can only find Dorcas Wallis at Trevorgans
I have also looked at niece and grand-daughter just incase she was visiting under a nickname.
Have square eyes now ;D

I just found why James was not mentioned directly in his father's will: From A2A: [no title] X 558/20 23 Oct. 1832 These documents are held at Cornwall Record Office Contents: Release (lease for a year missing) Consideration; 10/- and natural love and affection (1) Rob. Wallis of Sennen, farmer, to (2) Jas. Wallis, his son Dwelling-houses, meeting-house, blacksmith's shops, lands and all appurtenances in village of Trereife in Sennen, now occ. Rob. and Jas. Wallis and others as tenants to (1); there's a bit more about the other tenants - not relevant to the will but I just love that line " 10/- and natural love and affection" really makes the ancestors real!

a further item from CRO catalogue about the Wallis connection to Treeve:
X558/19 Lease, moiety of Treeve tenement, Sennen 10 Mar 1802 Description Parties: 1) Christopher Harvey, late of Sancreed, now of St Levan, yeoman 2) Robert Wallis of Madron, yeoman. Lease and release, 1) to 2), moiety of Treeve tenement, as in X 558/13, formerly in occupation of Charles Bottrell, from whom 1) purchased it. Consideration: £613
Was Robert one of the earliest "Second home owners" in Sennen?? ;D
