I was perhaps presuming too much based on William MATTHEWS being a witness to Charles and Jennifer's marriage and a John MATTHEWS being a witness at Charles and Margery's marriage.
Perhaps, like mine often does, your brain is overheating a little. The witnesses to the 1798 Sancreed marriage of Charles Matthews to Jennifer Pollard were William POLLARD and John POLLARD - there were no Matthews witnesses at all.
And as that marriage was 1798 I suspect Charles was born in the 1770s of perhaps earlier. At the marriage he made his mark - a very firm and bold 'W' but so far I have not been able to find another event involving a Charles Matthews with a mark to match it.
As for Charles and Margery Nicholls - this man is almost certainly the 1781 son of William Matthews and Elizabeth Giles. He signed his own name and had a John Matthews and William Pearce as witnesses.
Remember you said that he died 27th August 1835 and that he was age 54 at the time which, if accurate, does equate to a birth in 1781 or perhaps very late in 1880. The fact that a John Matthews was a witnesses does not automatically signify it was his father either, John could have been a brother, cousin or uncle.
This Charles did have a brother baptised in 1788 who would have been about age 16 when Charles was married. But John married in 1816 at Madron and his signiature then is in no way similar to the 1804 witness.
I have tried again but still can find no other signiatures that match anything we need to help solve this problem.
